fix(deps): keep gray-matter loading on js-yaml 5

Browse source 
gray-matter 4.x still binds safeLoad/safeDump at require time, which js-yaml 5 removed. Wrap v5 with those aliases so Eleventy can boot, and leave Eleventy itself on js-yaml 4.
